Set oven to 350°F and place parchment paper on a big cookie sheet.

Drop spoonfuls of cottage cheese (1 tablespoon each) 2 inches apart on the sheet. Use a spoon to flatten them to about a quarter-inch thickness.

Sprinkle any extra seasoning you like over the flattened cheese.

Bake for 40-50 minutes until the edges are deep brown and the tops turn medium or golden brown. Start checking around minute 35.

Let them fully cool for 20-30 minutes until they’re completely crispy.
