Key Lime Fudge (Print Version)

# Ingredients:

01 - Grated zest from 5 limes—about 1/4 cup.
02 - 5-ounce can of low-fat evaporated milk.
03 - 1/2 tsp salt.
04 - 1 2/3 cup white sugar.
05 - 2 tablespoons of key lime juice from 5-7 limes.
06 - 2 cups of white chocolate chips.
07 - 12 big marshmallows, cut into quarters.

# Instructions:

01 - Grease a piece of foil and line your 8x8 pan with it.
02 - Heat sugar, salt, and evaporated milk in a solid saucepan over medium. Let it bubble.
03 - Turn down the heat a bit and keep stirring for 5–6 minutes as it boils.
04 - Off the heat, mix in marshmallows, lime zest, lime juice, and chocolate until smooth and creamy.
05 - Evenly pour mixture into the pan and let it fully set and cool.
06 - Slice into little 1-inch pieces.

# Notes:

01 - Feel free to swap key limes with regular ones.
02 - 8-inch pans work nicer than 9-inch ones.
03 - A double boiler isn’t needed but makes things simpler.
