# Ingredients:

→ Main

01 - 3 tablespoons unsalted butter
02 - 1 small onion, thinly sliced
03 - 225 grams shaved beef steak
04 - 4 eggs, beaten
05 - 1 teaspoon Montreal steak seasoning
06 - 1 tablespoon Worcestershire sauce
07 - 0.5 teaspoon salt
08 - 2 slices American cheese

→ Sauce

09 - 120 millilitres mayonnaise
10 - 2 tablespoons yellow mustard
11 - 0.25 teaspoon dried dill

→ Sandwich assembly

12 - 2 large plain bagels

# Instructions:

01 - Combine mayonnaise, mustard, and dried dill in a small bowl. Mix thoroughly and refrigerate until needed.
02 - Add 1 tablespoon of butter to a pan over medium heat. Add sliced onion and salt, stirring occasionally until softened and deeply golden. Remove the onions from the pan and set aside.
03 - Melt 1 tablespoon of butter in the skillet. Pour in the beaten eggs and cook, stirring gently, until softly scrambled. Divide into two equal portions and keep warm.
04 - Place shaved steak in a bowl. Add Worcestershire sauce and Montreal steak seasoning, tossing to coat the steak evenly.
05 - Melt the remaining tablespoon of butter in the skillet over medium heat. Add the seasoned shaved steak, stirring frequently until just browned. Return the sautéed onions to the skillet, mixing with steak. Separate into two equal mounds. Top each with a slice of American cheese and allow to melt.
06 - Lightly toast the bagels in a toaster or on the skillet until golden brown.
07 - Spread prepared sauce generously on both cut sides of each bagel. Layer half of the scrambled eggs onto the bottom half, top with the steak, onion, and cheese mixture, and close with the top half of the bagel. Serve immediately.

# Notes:

01 - Ensure the steak is shaved very thin for best texture and quick cooking.
02 - Sauce can be prepared in advance and stored in the refrigerator for up to three days.
