Preheat oven to 200°C and line a baking sheet with parchment paper or a silicone baking mat.

Place flour, salt, black pepper, garlic powder, onion powder, and smoked paprika in a shallow dish. In a separate shallow dish, add beaten eggs. In a third dish, place the panko breadcrumbs.

Pat chicken pieces dry with paper towels. Coat each piece in the flour mixture, dip into the beaten eggs, then press into the panko breadcrumbs so they adhere evenly.

Arrange coated chicken on the prepared baking sheet. Lightly spray with cooking oil or drizzle with olive oil. Bake for 25–30 minutes until the coating is crisp and the internal temperature reaches 74°C.

While chicken bakes, combine honey, hot sauce, butter, and red pepper flakes in a small saucepan. Heat over medium, stirring until butter melts and sauce is smooth. Stir in apple cider vinegar or lemon juice if desired.

Remove chicken from oven and drizzle the hot honey sauce over each piece, or toss chicken in the sauce for fuller coverage.

Garnish with chopped parsley and sprinkle with sesame seeds or crushed peanuts if desired. Serve immediately with preferred accompaniments.
