Beef Rice Skillet (Print Version)

# Ingredients:

01 - 1 cup shredded cheddar cheese (optional).
02 - 1 teaspoon dried oregano.
03 - Salt and pepper, adjust to your liking.
04 - 2 cups beef broth.
05 - 1 medium onion, chopped up.
06 - 1 lb of lean ground beef.
07 - 1 cup white rice (long-grain works best).
08 - 14.5 oz diced tomatoes in a can.
09 - 1 bell pepper, chopped into small bits.
10 - 2 cloves garlic, chopped finely.
11 - 1 tablespoon of olive oil.
12 - 1 teaspoon of paprika spice.

# Instructions:

01 - In a skillet, warm up some oil. Season the beef with some salt and pepper, then cook it until it’s browned all through.
02 - Toss in chopped garlic, peppers, and onions. Let them cook about 3-4 minutes till they're soft.
03 - Mix in the oregano and paprika thoroughly.
04 - Stir the rice into the pan so it gets mixed well with the beef.
05 - Pour the tomatoes and broth in, let it heat until it starts bubbling, then lower the heat.
06 - Put the lid on and let it cook on low for about 18-20 minutes. Check to make sure the rice softens.
07 - Use a fork to fluff up the rice. Add cheese on top, if that sounds good, and adjust salt if needed.

01 - All cooked in one pan.
02 - Feel free to toss in extra veggies.
03 - Adding cheese is totally optional.
