Turn your oven on to 450°F (230°C) and let it get hot.

In a skillet on medium-high heat, cook the beef until it's browned. Mix in the seasoning packet and enchilada sauce. Let it bubble a bit, then take it off the heat.

Cover the stack of tortillas with a damp paper towel, then microwave them for 30-60 seconds to make them soft.

Lightly coat one side of each tortilla with olive oil. Lay it oil-side down, sprinkle 2 tablespoons of cheese, scoop on ¼ cup of beef, add 2 more tablespoons of cheese, then fold it over to form a half-moon shape.

Lay the folded tacos on a baking sheet so they don’t overlap. Bake for 16 minutes until they look golden and crispy.

Let them rest for 3 minutes. Dish them up with any toppings you like.
