Beef Tacos Crispy (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1 tablespoon olive oil
02 - 10 corn tortillas
03 - 2.5 cups of Monterey Jack, Oaxaca, or Mexican cheese blend
04 - ¾ cup of enchilada sauce
05 - 1 packet of seasoning for tacos
06 - 1 pound of lean ground beef (90%)

07 - Lime wedges
08 - Sour cream
09 - Pickled onions
10 - Salsa
11 - Guacamole
12 - Hot sauce

# Instructions:

01 - Turn your oven on to 450°F (230°C) and let it get hot.
02 - In a skillet on medium-high heat, cook the beef until it's browned. Mix in the seasoning packet and enchilada sauce. Let it bubble a bit, then take it off the heat.
03 - Cover the stack of tortillas with a damp paper towel, then microwave them for 30-60 seconds to make them soft.
04 - Lightly coat one side of each tortilla with olive oil. Lay it oil-side down, sprinkle 2 tablespoons of cheese, scoop on ¼ cup of beef, add 2 more tablespoons of cheese, then fold it over to form a half-moon shape.
05 - Lay the folded tacos on a baking sheet so they don’t overlap. Bake for 16 minutes until they look golden and crispy.
06 - Let them rest for 3 minutes. Dish them up with any toppings you like.

# Notes:

01 - Make sure the tortillas are warmed up enough so they're bendable without tearing.
02 - A ceramic or nonstick baking sheet is better than foil to stop sticking.
03 - To keep tacos folded while baking, use toothpicks if needed.
