Beat the butter with both sugars till they're fluffy and pale, about 2-3 minutes. Stir in the vanilla. Slowly add the flour and then mix in the chocolate bits.

Cover your dough with plastic and pop it in the fridge for 30 minutes at least.

Combine cream, milk, sugar and vanilla in a bowl. Put it in your ice cream maker and follow what your machine's guide says.

When your ice cream's done, stir in the cold cookie dough pieces and the broken graham crackers.

Lay out the ice cream on parchment in a flat rectangle, roughly ½ inch tall. Put chocolate bits and marshmallows all over it.

With the help of parchment, roll everything up into a log shape. Wrap it tight and stick it in the freezer for 4 hours minimum or leave it overnight.
