Hearty Ground Beef Quesadillas (Print Version)

# Ingredients:

01 - 2 tbsp of olive oil.
02 - 1 lb of ground beef.
03 - 1 small onion, chopped finely.
04 - 2 minced garlic cloves.
05 - 1 medium red bell pepper, cut into small pieces.
06 - 1 diced jalapeño, seeds removed.
07 - 1 tsp of chili powder.
08 - 1 tsp of cumin powder.
09 - 1 tsp of smoked paprika.
10 - 1/2 tsp dried oregano.
11 - 1/2 tsp of salt.
12 - 1/4 tsp freshly ground black pepper.
13 - 2 tbsp of tomato paste.
14 - 1/4 cup of water or beef stock.
15 - 8 large tortillas made from flour.
16 - 3 cups of grated cheese.

# Instructions:

01 - Use oil in a pan on medium heat to brown your meat and onion together.
02 - Stir in minced garlic, jalapeño, and red peppers. Cook for 3-4 minutes, toss in spices, and stir for another minute.
03 - Mix in broth and tomato paste, let it simmer for a few minutes to thicken up.
04 - Put the beef mix and shredded cheese on one side of the tortilla, then fold it shut.
05 - Toast on each side in a pan over medium heat for 2-3 minutes, until crispy and cheese is melted.
06 - Let sit for a few minutes before slicing, then add your favorite toppings and serve.

01 - You can prepare the beef mixture earlier.
02 - Stick to medium heat while cooking for perfect results.
03 - Keep quesadillas warm in a 200°F oven if you're cooking in batches.
