Toss the ground beef, onion and green pepper into a big pan and cook until beef turns brown and veggies get soft, then drain the extra fat.

Pour in the sloppy joe sauce, mix everything together and let it bubble for a couple minutes.

Dump in your cooked pasta and stir everything so the pasta gets covered.

Now add about 1-1½ cups of the cheddar and keep stirring until it's all melty.

Sprinkle the leftover cheese on top and warm on low heat until it melts (putting a lid on can speed this up). Add some parsley on top if you want.
