Cheesy Chicken with Broccoli (Print Version)

# Ingredients:

→ Chicken

01 - 4 medium-sized chicken breasts
02 - 1 tablespoon olive oil
03 - 3 tablespoons reduced-salt chicken stock

→ Spice Rub

04 - 1 teaspoon powdered garlic
05 - 1 teaspoon salt
06 - ½ teaspoon powdered onion
07 - ½ teaspoon paprika
08 - ½ teaspoon black pepper

→ Filling

09 - 1 cup tiny broccoli pieces
10 - 1 heaping packed cup (4 oz) newly grated sharp cheddar
11 - 5 oz cream cheese, room temperature
12 - ½ cup red bell pepper, chopped small
13 - ¼ cup pre-cooked, diced bacon
14 - ½ teaspoon dry parsley
15 - ½ teaspoon dry chives
16 - ¼ teaspoon dry dill (if you want)

# Instructions:

01 - Heat your oven to 375°F.
02 - Put broccoli in microwave with 2 tablespoons water for 2 minutes, then drain it.
03 - Combine spice rub in a small bowl. Take out 1 teaspoon and mix with filling stuff. Blend cream cheese mixture together, then mix in broccoli.
04 - Wrap chicken with plastic and flatten to make tender. Dry it with paper towels.
05 - Cut into the thicker edge of each breast but don't go all the way through so you make a deep pocket.
06 - Pack each pocket with the filling mix. Use toothpicks to close if needed.
07 - Rub leftover spice mix on both chicken sides.
08 - Warm a cast iron pan on medium-high. Add oil and brown chicken for 2-3 minutes each side until golden.
09 - Put all chicken back in pan, pour in chicken stock. Cover with foil and cook 12-17 minutes till inside temp hits 160°F.
10 - Let chicken sit for 5 minutes before eating so it reaches 165°F.
