White Chicken Chili (Print Version)

# Ingredients:

01 - 1 small yellow onion, diced.
02 - 1 tablespoon cooking olive oil.
03 - 2 cloves of garlic, finely chopped.
04 - 2 1/2 cups chicken broth (low sodium).
05 - 2 (4 oz) cans of diced green chilies.
06 - 1/4 teaspoon cayenne spice.
07 - 1 1/2 teaspoons of cumin powder.
08 - 1/2 teaspoon paprika seasoning.
09 - 1/2 teaspoon dried oregano leaves.
10 - Juice from half a lime.
11 - 2 (15 oz) cans of white northern beans.
12 - 1 cup of either sour cream or plain Greek yogurt.
13 - 1 cup of sweet corn.
14 - 2 cups chicken, shredded and cooked.
15 - Add salt and pepper based on your taste.
16 - Extras to top: avocado, cheese, fresh cilantro, green onions, or tortilla chips.

# Instructions:

01 - Heat up the oil, stir in onion, and cook for 3-5 mins until softened. Toss in garlic and cook briefly—about 30 seconds.
02 - Mix in the broth, green chilies, lime juice, and spices. Sprinkle in some salt and pepper.
03 - Drain the beans. Blend a portion with broth to make it thicker. Add the remaining beans along with the corn.
04 - Let it gently cook for 15-30 mins without covering.
05 - Take it off the heat. Stir in the cooked chicken and sour cream. Serve it however you like with your toppings.

01 - Great option for Instant Pot or slow cooker.
02 - Perfect for leftover chicken meals.
03 - Best to freeze before adding sour cream.
