Chicken Hummus Naan Rolls (Print Version)

# Ingredients:

→ For the Wraps

01 - 4 naan flatbreads
02 - 1 cup roasted bell pepper hummus
03 - 4 cups fresh spring greens
04 - 3 cups pulled cooked chicken
05 - 4 tablespoons creamy feta or goat cheese

→ For the Veggie Mixture

06 - 1/2 cup cucumber chunks, peeled and cut into quarters
07 - 1 cup halved cherry tomatoes
08 - 1/2 cup chopped red onion, peeled
09 - 1/4-1/3 cup homemade wine and vinegar dressing

→ For Garnish

10 - 1 1/2 teaspoons extra dressing per wrap
11 - Sea salt & fresh ground pepper as needed
12 - Good quality olive oil for finishing

# Instructions:

01 - Pop the naan under a low broiler for 3-5 minutes each side until lightly golden and crisp.
02 - Mix the cucumber pieces, tomatoes, and diced onion together. Coat with the wine and vinegar dressing.
03 - Smear hummus onto each naan, add a bed of spring greens and top with chicken. Spoon veggie mix and sprinkle cheese over everything.
04 - Add a splash more dressing, sprinkle with salt and pepper, and drizzle with olive oil. Eat right away or tie with string for later.
