One-Pot Burrito Bowls (Print Version)

# Ingredients:

→ Base

01 - 1 to 1½ pounds skinless boneless chicken thighs or breasts
02 - 1 (14.5 oz) can chopped tomatoes
03 - 1 cup reduced-sodium chicken stock
04 - 2 teaspoons chile powder
05 - 2 teaspoons sea salt
06 - 1 teaspoon cumin powder

07 - 1 (15 oz) can black beans, rinsed and drained
08 - 1 cup brown rice, uncooked
09 - 1 cup corn kernels, frozen

→ Optional Toppings

10 - cheese, shredded
11 - fresh cilantro, chopped
12 - sour cream
13 - avocado chunks
14 - fresh salsa
15 - spicy sauce
16 - green onions, sliced
17 - lettuce, thin sliced

# Instructions:

01 - Put chicken, tomatoes, stock, and spices in your slow cooker. Let it cook on LOW for 3-4 hours.
02 - Add your beans, rice, and corn to the pot. Keep cooking on LOW another 3-4 hours until the rice gets soft.
03 - Pull apart the chicken, stir everything or leave it separate. Taste and add more spices if needed. Dish up with your favorite toppings.

# Notes:

01 - Watch your rice during the final hour
02 - Pour in extra stock if it looks too dry
03 - Switch to HIGH setting to get rid of extra liquid
