# Ingredients:

01 - 5 chicken thigh fillets, bone in, no skin
02 - 1 large onion, diced (yellow, white, or brown)
03 - 2 garlic cloves, crushed
04 - 30g (2 tablespoons) butter or olive oil
05 - 1 1/2 cups (270g) of uncooked rice, white
06 - 375ml (1 1/2 cups) warm chicken stock or broth
07 - 315ml (1 1/4 cups) hot water

→ Chicken Seasoning

08 - 1 tsp smoked paprika
09 - 1 tsp thyme, dried
10 - 1/2 tsp garlic powder
11 - 1/2 tsp onion powder
12 - 3/4 tsp salt
13 - Black pepper, as needed

→ Extras for Garnish

14 - Sprayable cooking oil
15 - Finely chopped parsley or fresh thyme leaves

# Instructions:

01 - Turn your oven on to 180°C / 350°F.
02 - In a large baking dish (25 x 35 cm or 10 x 15 inches), spread out the garlic and onion. Drop the butter in the center and pop it in the oven for about 15 mins. Check around the 12-minute mark and stir if needed so nothing burns.
03 - Combine all the seasoning ingredients for the chicken in a bowl. Coat each side of the chicken evenly.
04 - Take the hot baking dish out of the oven. Stir the rice into the dish.
05 - Set the chicken pieces right on top of the rice. Pour the hot stock and water around the chicken and rice.
06 - Wrap the dish with foil and bake for half an hour. Remove the foil, give the chicken a light spray of oil (if you want to make it look golden), and bake for 20 mins more until the liquid's gone.
07 - Let it sit for 5 minutes after baking. Take the chicken out, fluff the rice with a fork, and sprinkle parsley or thyme on top if you feel like it. Serve while hot.

# Notes:

01 - This dish packs enough flavor on its own, but if you want to dress it up, whip up a quick gravy in 4 minutes.
02 - If cooking more, use extra baking dishes. For smaller portions, go for a smaller tray.
03 - Experiment with other seasonings instead of the Chicken Rub—try something like Lemon Pepper or Italian Herbs.
04 - If you use breast or boneless thighs, bake the rice first, covered, without the chicken for 30 minutes. Then add the chicken on top, uncovered, and bake for another 20-25 minutes.
05 - For brown rice, use 1/2 cup extra hot water. Bake it with foil on for 1 hour, then cook uncovered for 15 more minutes until it's soft.
