Sweet Chili Salmon Glaze (Print Version)

# Ingredients:

01 - 1 1/2 pounds salmon fillet, center cut.
02 - 1/2 cup Thai chili sauce, sweet variety.
03 - 2 teaspoons soy sauce.
04 - 1 tablespoon finely chopped fresh ginger.
05 - 1 teaspoon Sriracha for heat.
06 - 2 tablespoons lime juice, freshly squeezed.
07 - 1 bunch green onions, sliced thinly.
08 - 1/8 teaspoon black pepper for seasoning.
09 - 1/2 teaspoon coarse kosher salt.
10 - A few handfuls (2–3) of mixed baby greens.
11 - 1 tablespoon lime juice for tossing greens.
12 - 1 tablespoon olive oil.
13 - A few sprigs (2–3) of fresh cilantro.
14 - A few sprigs (2–3) of fresh mint.
15 - 1 lime, sliced into wedges for serving.

# Instructions:

01 - Combine chili sauce, Sriracha, lime juice, soy sauce, ginger, and part of the green onions in a bowl.
02 - Pull out any pin bones, sprinkle salt and pepper over the fish, and set it in a baking dish with some glaze underneath and the rest poured on top.
03 - Bake slowly at 275°F for 18–23 minutes until the middle hits 130°F.
04 - Mix baby greens with olive oil, a pinch of salt, some pepper, and lime juice until nicely coated.
05 - Lay the fish on the greens, sprinkle herbs, the rest of the green onions, and lime wedges on top before serving.

# Notes:

01 - Can assemble ingredients up to 2 hours in advance.
02 - Works best with a center-cut salmon piece.
03 - Fish will keep cooking a bit after it's out of the oven.
