02 - 1 Egg (beaten)
03 - 1 cup Potato or corn starch
04 - ½ Bell pepper
05 - 2-3 Hot chillies (like bird's eye)
06 - 2-3 Spring onions
07 - ½ Sweet onion

→ Beef Marinade

08 - 1 tbsp Soy sauce (light)
09 - 1 tsp Garlic and ginger paste
10 - 1 tsp Sesame oil
11 - ½ tsp Granulated sugar
12 - ¼ tsp Ground white pepper

→ Sauce Mix

13 - 3 tbsp Sweet chilli sauce
14 - 2 tbsp Tomato ketchup
15 - 2 tbsp Soy sauce (light)
16 - 1 tsp Rice or white vinegar
17 - 1 tbsp White sugar
18 - ½ tsp Table salt

# Instructions:

01 - Slice the beef thinly. Toss the slices in all the marinade ingredients till evenly coated. Let them sit for at least 15 minutes.
02 - Stir together all sauce ingredients in a small bowl. Leave it aside for later.
03 - Crack the egg into the marinated beef. Stir the slices till they're well-coated, then cover them completely in starch. Shake off extra starch before frying.
04 - Bring oil to 350°F. Deep fry the coated beef for 1-2 minutes till golden and crispy. Place them on paper towels or a rack to get rid of extra oil.
05 - In a hot wok, pour in a splash of oil. Toss in the sliced onion, stir for a few seconds, then add the bell pepper. Mix everything well.
06 - Add the fried beef to the wok. Pour in the sauce, toss in the spring onions and chillies. Stir it all up on high heat for a couple of minutes.
07 - Dish it out onto a plate. Great with noodles or steamed rice. It's a tasty snack too!

# Notes:

01 - Tastes the best when eaten right away while crispy
02 - Reduce or skip the hot chillies for a milder dish
