Cajun Beans With Rice (Print Version)

# Ingredients:

→ Main

01 - 1 pound dried red beans
02 - 12-14 ounces sliced andouille sausage, cut into ¼-inch rounds
03 - 1 large yellow onion, chopped
04 - 2 celery stalks, chopped
05 - 1 small red bell pepper, chopped
06 - 1 small green bell pepper, chopped
07 - 6 garlic cloves, finely chopped

→ Seasonings

08 - 1 teaspoon salt, adjust to your taste
09 - 1 teaspoon dried oregano
10 - ½ teaspoon dried thyme
11 - ½ teaspoon paprika
12 - ⅛ teaspoon ground cayenne pepper, adjust for heat
13 - Black pepper, freshly ground to taste
14 - 2 bay leaves

→ Liquids & Fats

15 - 2 tablespoons olive oil
16 - ½ tablespoon butter
17 - 6-7 cups veggie broth, low sodium

→ Finishing

18 - ½ cup fresh parsley, chopped, plus extra for topping
19 - ¼ cup fresh green onions, chopped, plus extra for topping
20 - 1½ cups cooked long grain rice, brown or white

# Instructions:

01 - Drop dry beans in a big pot and pour water until it's 2 inches above the beans. Let them soak overnight or for 8 hours.
02 - Warm up oil in a Dutch oven over medium heat. Cook sausage pieces until brown on each side. Take them out and put aside.
03 - Drop butter in the pot. Cook onions for 3 minutes, throw in celery and peppers for another 4 minutes, then mix in garlic for just 15 seconds.
04 - Mix in salt, oregano, thyme, paprika, cayenne, and black pepper. Let it cook for a minute.
05 - Pour in broth and scrape up any stuck bits. Add the drained beans, cooked sausage, and bay leaves.
06 - Get it boiling, then turn heat down low. Cover and let it bubble gently for 1½-2 hours until beans soften.
07 - Take out bay leaves. Grab a cup of beans, smash them up, and stir back in. Add some water if it looks too thick.
08 - Taste and add more seasonings if needed. Mix in parsley and green onions, then cook for 5 more minutes.
09 - Ladle over hot rice and sprinkle with extra parsley and green onions on top.

01 - Look through beans for tiny stones before you soak them
02 - You can use canned beans instead (2 15-oz cans) and cook for less time
03 - Keep leftover beans and rice in different containers
