Warm up your oven to 325°F. Coat an 8x5 loaf pan with cooking spray and put parchment paper inside.

Stir flour, baking soda, salt, and cinnamon together in a bowl.

Beat the egg, sugar, and oil in another bowl until they're well blended.

Add the dry mix to your wet ingredients. Stir in buttermilk, vanilla, and smooshed bananas.

Dump mixture into your pan, sprinkle walnuts on top. Cook for 60-75 minutes until a knife stuck in comes out without batter.
