Creamy Chicken Dinner (Print Version)

# Ingredients:

01 - 1½ pounds chicken (breasts or thighs), chopped into 1-inch chunks.
02 - 1 teaspoon of olive oil.
03 - 2 teaspoons of Italian seasoning.
04 - Pepper and salt to your liking.
05 - ½ cup of finely diced onions.
06 - ½ cup of chopped celery.
07 - ½ cup of diced carrots.
08 - 3 cloves garlic, minced.
09 - ¼ cup diced sun-dried tomatoes.
10 - ¼ cup of all-purpose flour.
11 - 2 tablespoons of tomato paste (if you want).
12 - 6-8 cups of chicken stock.
13 - 6 ounces of small pasta shells.
14 - 1 cup of creamy heavy cream.
15 - 1 cup of shredded parmesan cheese.
16 - 3 cups of fresh spinach leaves.

# Instructions:

01 - Heat the oil in a big pot on medium-high. Toss in the chicken, sprinkle the Italian seasoning, salt, and pepper. Let it cook about 5 mins till browned.
02 - Stir in garlic, celery, carrots, onions, and sun-dried tomatoes. Let everything soften up for roughly 4 minutes.
03 - Dust in the flour, give it a good mix. Stir in tomato paste if you're using it. Slowly pour in the broth while mixing to keep it smooth.
04 - Turn up the heat to boil, then add the pasta and seasoning. Cover it up, simmer for 20 minutes till the chicken's done and the pasta's soft.
05 - Add the cream, cheese, and spinach. Let it all simmer for 5 more minutes. Taste and tweak seasoning if needed.

# Notes:

01 - Start off with less broth; you can always add more.
02 - Rotisserie chicken works great for this.
03 - You could cook the pasta separately if preferred.
04 - Slow cooker is another option for this.
