Effortless Potato Soup (Print Version)

# Ingredients:

01 - 6 slices of bacon, diced into tiny bits.
02 - 3 tbsp of butter.
03 - 1 medium yellow onion, chopped finely.
04 - 3 big garlic cloves, freshly minced.
05 - About 1/3 cup of plain flour.
06 - Roughly 2.5 pounds of golden potatoes, peeled and cubed.
07 - 4 cups of chicken stock (fresh is great).
08 - 2 cups of whole milk.
09 - Heavy cream, approximately 2/3 cup.
10 - A little over 1 1/2 tsp of salt.
11 - 1 tsp of freshly cracked black pepper.
12 - Half a tsp of ancho chili powder.
13 - 2/3 cup of sour cream.
14 - Grated cheddar to sprinkle on top.
15 - Finely chopped chives to garnish.

# Instructions:

01 - Fry the bacon in a big pot until it’s nice and crunchy. Scoop out the bacon but leave the grease behind.
02 - In the bacon grease, drop the butter and let it melt. Toss in the onion to soften it, then add the garlic until it smells amazing.
03 - Mix in the flour, making a smooth paste. Pour in the potatoes, chicken broth, milk, cream, and seasonings. Stir it all up!
04 - Let it come to a boil, then cook till the potatoes are soft enough to poke through, around 10 minutes.
05 - Scoop some of the soup out and blend it to smooth it out. Combine it back in the pot with the rest of the soup that’s still chunky.
06 - Mix in your bacon and sour cream. Let it simmer for 15 minutes. Top with cheese, extra bacon bits, and some fresh chives.

# Notes:

01 - Always start with less salt, then add more if needed.
02 - For extra creamy soup, blend more of it. For chunkier soup, blend less.
03 - Golden potatoes are perfect because they’re naturally creamy.
