Potato Broccoli Cheese Boats (Print Version)

# Ingredients:

→ Potatoes

01 - 2 big russet potatoes
02 - Enough olive oil to drizzle over top
03 - A pinch of kosher salt or sea salt
04 - Freshly ground black pepper and chopped chives or scallions, as you like

→ Broccoli Cheese Sauce

05 - 2 tablespoons plain butter
06 - 2 tablespoons regular flour
07 - 1 cup milk (full-fat or reduced fat)
08 - 1/4 teaspoon cayenne for heat
09 - 1/8-1/4 teaspoon powdered garlic
10 - 1/8-1/4 teaspoon regular salt
11 - 5.5 ounces freshly shredded medium cheddar
12 - 2 cups tiny chopped broccoli pieces

# Instructions:

01 - Turn oven to 425°F. Scrub potatoes clean, stab with fork several times, coat with oil, and add a sprinkle of salt.
02 - Put on baking sheet and cook for 50-60 minutes until soft when poked.
03 - Heat butter till melted, stir in flour and let bubble. Pour milk in slowly while stirring. Add seasonings and cook till it gets thick.
04 - Lower the heat, add cheese bit by bit until smooth. Stir broccoli in and take off heat.
05 - Cut potatoes open, gently fluff the middle with fork, add pepper and chives. Pour broccoli cheese mix on top.

# Notes:

01 - Try zapping potatoes in microwave for 6-9 minutes if you're short on time
02 - Cheese you grate yourself works way better than the bagged stuff
03 - Works great as dinner by itself or alongside something else
