Strawberry Cheesecake Bars (Print Version)

# Ingredients:

→ Crust

01 - 1/2 cup melted unsalted butter
02 - 1 1/2 cups of crushed graham crackers

→ Cheesecake Filling

03 - 2 teaspoons vanilla extract
04 - 2 room-temperature eggs
05 - 16 ounces softened cream cheese
06 - 1/4 cup sour cream
07 - 1/2 cup granulated sugar

→ Strawberry Compote

08 - 5 tablespoons sugar
09 - 1/2 tablespoon lemon juice
10 - 2 teaspoons cornstarch
11 - 3 tablespoons water
12 - 1 3/4 cups fresh strawberries, diced

→ Topping

13 - 1/4 cup melted white chocolate

# Instructions:

01 - Turn the oven to 350°F. Grab a 9x9 pan, stick some parchment paper inside, and spray it lightly with non-stick spray.
02 - Combine the graham crumbs with butter, pressing them flat in the pan using the bottom of a cup.
03 - Combine cream cheese, sugar, sour cream, and vanilla to make it smooth. Add eggs one by one and mix after each.
04 - Pour the filling on top of the base and bake for 40-45 minutes. It should jiggle slightly in the center. Let it fully cool down after baking.
05 - Throw all compote stuff into a pan, let it cook over medium heat for about 10 minutes, stirring here and there. Chill it in the fridge when it's done.
06 - Slice the cheesecake into squares. Make a small dip in each square, add the compote, and drizzle white chocolate over the top.
