Turn the oven to 350°F. Grab a 9x9 pan, stick some parchment paper inside, and spray it lightly with non-stick spray.

Combine the graham crumbs with butter, pressing them flat in the pan using the bottom of a cup.

Combine cream cheese, sugar, sour cream, and vanilla to make it smooth. Add eggs one by one and mix after each.

Pour the filling on top of the base and bake for 40-45 minutes. It should jiggle slightly in the center. Let it fully cool down after baking.

Throw all compote stuff into a pan, let it cook over medium heat for about 10 minutes, stirring here and there. Chill it in the fridge when it's done.

Slice the cheesecake into squares. Make a small dip in each square, add the compote, and drizzle white chocolate over the top.
