01 - 1 big eggplant, skin removed and chopped into 1-inch chunks
02 - 2 tablespoons avocado oil

03 - 1 teaspoon dried thyme
04 - 1 teaspoon dried rosemary
05 - 1/2 teaspoon smoked paprika
06 - 1/2 teaspoon powdered garlic
07 - 1/4 teaspoon kosher salt, plus more for prep

# Instructions:

01 - Chop the eggplant into 1-inch chunks and dust with extra kosher salt. Leave it for 15-30 minutes so moisture comes out. Wipe completely dry with paper towels.
02 - Mix eggplant chunks with avocado oil in a bowl. Throw in all your seasonings (thyme, rosemary, garlic powder, smoked paprika, and that 1/4 teaspoon kosher salt) and toss until everything's coated well.
03 - Warm up your air fryer to 400°F. Spread the flavored eggplant chunks in one layer in your basket. Cook them for 18 minutes, giving them a shake halfway so they brown evenly.
04 - Grab your eggplant cubes right away while they're still hot and crunchy. They're great on their own or paired with your go-to main dish.
