Cover a baking tray with wax paper. In a shallow bowl, whisk the egg. In another bowl, combine breadcrumbs, salt, and Italian seasoning.

Coat mozzarella sticks in egg first, then cover them with the breadcrumb mix. Arrange them on the tray. Pop into the freezer for at least half an hour or up to an hour.

Repeat the process of dipping in egg and breadcrumbs to double coat. Freeze again for another half hour to an hour.

Get your air fryer to 390°F. Spray both the fryer basket and the sticks lightly with cooking spray. Cook them in the fryer for 6 to 8 minutes until they're crispy and golden.

Let them rest for a minute, then enjoy right away while the cheese is melty and warm.
