Combine the mayo, garlic powder, and ketchup in a bowl. Chill it in the fridge until you're ready to use.

Slice into 1 1/2 inch pieces after peeling and scoring the plantains. Let the chunks soak in salted water for 20 minutes.

Dry off the plantains, coat them in oil, and air fry at 350°F. Cook for 3 to 6 minutes on each side until soft.

Flatten the cooked plantains to about 1/4 inch thick using a flat item or tostonera.

Brush the smashed plantains with oil and air fry at 400°F for 3 minutes. Flip them, oil again, and cook for another 4 minutes.

Sprinkle with some coarse salt and enjoy them warm alongside the dipping sauce.
