Crispy Air Fryer Egg Rolls (Print Version)

# Ingredients:

01 - 1 medium carrot, grated.
02 - 3 scallions, finely sliced.
03 - 1 tablespoon rice vinegar.
04 - 3 cups shredded cabbage.
05 - Duck sauce for dipping (optional).
06 - 1 tablespoon soy sauce.
07 - Plum sauce for dipping (optional).
08 - 1 clove garlic, chopped super fine.
09 - 1 tablespoon of olive oil.
10 - 1 pound of ground chicken or pork.
11 - 1 tablespoon freshly grated ginger root.
12 - Oil to brush or spray.
13 - 12 wrappers for egg rolls.
14 - Soy sauce for dipping (optional).

# Instructions:

01 - In a big pan, warm up olive oil on medium heat. Toss in your ground chicken or pork and cook until it's browned, about 6–8 minutes. Add minced garlic, ginger, shredded carrot, chopped scallions, and cabbage. Stir it all together for 3–4 minutes until the cabbage softens. Pour in soy sauce and rice vinegar for flavor. Remove the pan from the burner to cool.
02 - Lay out a wrapper so it looks like a diamond. Place a quarter cup of the cooled filling in the middle. Wet the sides with some water, fold the edges inward, and roll it tightly like a burrito. Do this for the rest of the wrappers.
03 - Put the wrapped rolls into the fryer basket, keeping them spaced out. Brush or spray a little bit of oil over each one.
04 - Set the air fryer to 350°F and let the rolls cook for 6–7 minutes. Flip them, give them another light brush of oil, and cook for 4–5 more minutes until they're beautifully golden and crispy.
05 - Serve these crispy rolls while they’re still hot. Pair with whichever dipping sauce you like best.

# Notes:

01 - These egg rolls made in an air fryer are lighter but still pack that crunch you love. The filling has a mix of meat and veggies that's perfect together.
02 - No air fryer? No problem! Fry your egg rolls in a half-inch of oil heated to 350°F for about 3–4 minutes on each side, until crispy and golden.
