Crispy Avocado Air Fryer (Print Version)

# Ingredients:

01 - 2 large eggs.
02 - Cooking spray.
03 - 1/2 cup finely grated Parmesan cheese.
04 - 1 cup panko breadcrumbs.
05 - 3 slightly firm, not-too-ripe avocados.
06 - 1/2 teaspoon black ground pepper.
07 - 1/2 cup ranch dressing.
08 - Fresh lime juice (optional).
09 - Coarse salt (optional).
10 - 2 tablespoons sriracha hot sauce.

# Instructions:

01 - Cut the avocados in half and remove the pits. Take the flesh out and slice each piece into 5 even strips.
02 - In one bowl, mix the panko, cheese, and pepper together. In a separate bowl, whisk the eggs until smooth.
03 - Take each avocado slice and dip it into the egg first. Then press it into the bread mixture so it’s fully covered.
04 - Spray the air fryer basket lightly with cooking spray. Lay the coated avocado pieces in a single layer. Cook them at 350°F for 3 minutes, flip them over, and cook another 3 minutes until golden brown.
05 - Combine the ranch dressing and sriracha sauce in a small bowl, stirring until smooth.
06 - Let the avocado fries rest for a minute or two. If you like, sprinkle some salt and drizzle lime juice on top before serving them with your spicy ranch dip.

# Notes:

01 - These avocado fries cooked in an air fryer are crispy on the outside and creamy inside. They’re best eaten while still warm.
02 - No air fryer? Pop them in a 350°F oven for 10-12 minutes until crisp and golden.
