Cut zucchini into thin slices. Sprinkle a little salt, leave for about 5 minutes, then pat dry.

In a bowl, combine breadcrumbs, pepper, cornstarch, garlic powder, Parmesan, salt, and cayenne (if you're using it).

Drizzle zucchini with olive oil. Mix well so every piece is lightly coated.

Dip the zucchini rounds into the breadcrumb mixture. Press gently so it sticks.

Spray air fryer basket with cooking oil. Arrange zucchini pieces without stacking. Cook at 325°F for 10 minutes, flip, and air fry another 8-12 minutes until crunchy.

Let them cool on a rack or eat warm. Add extra Parmesan on top if you'd like.
