Preheat oven to 175°C (350°F).

In a large pan over medium heat, cook ground beef until browned, breaking up the meat as it cooks. Drain excess fat.

If using, add taco seasoning to the beef according to packet instructions and stir to combine.

Stir in cheddar cheese soup, cream of chicken soup, evaporated milk, and diced green chilies. Mix thoroughly.

Cook beef and sauce mixture over medium heat, stirring regularly until the mixture is bubbling.

Coat a baking dish with non-stick spray to prevent sticking.

Scatter half of the Doritos over the base of the baking dish, lightly crushing large pieces for an even layer.

Spoon half of the meat mixture evenly over the Doritos. Sprinkle with one cup of shredded Mexican cheese.

Create a second layer using remaining Doritos, followed by the rest of the meat mixture and another cup of cheese.

Transfer baking dish to oven and bake for 20 minutes, or until cheese is fully melted and casserole is heated throughout.

Remove from oven and, if desired, garnish with sour cream, diced green onion, sliced cherry tomatoes, avocado or guacamole, and salsa before serving.
