Strawberry Cheese Bread Loaf (Print Version)

# Ingredients:

→ Bread Base

01 - 4 ounces softened cream cheese
02 - 1 cup white sugar
03 - 2 large eggs, whisked
04 - ½ cup buttermilk
05 - ⅓ cup plus 1 tablespoon plus 1 teaspoon cooking oil
06 - 1 teaspoon vanilla

→ Dry Ingredients

07 - 2 cups sifted and measured all-purpose flour
08 - 2 teaspoons baking powder
09 - ½ teaspoon salt
10 - ¼ teaspoon cinnamon
11 - 3 tablespoons strawberry Jello powder

→ Strawberry Mixture

12 - 2 cups fresh strawberries, smashed with 2 tablespoons sugar and 1 tablespoon flour
13 - 1 tablespoon juice saved from the crushed berries

→ Cream Cheese Glaze

14 - 4 ounces soft cream cheese
15 - 2 cups powdered sugar
16 - ¼ teaspoon vanilla
17 - 3 tablespoons heavy cream or full-fat milk

# Instructions:

01 - Heat your oven to 350°F. Coat a 9x5 inch loaf pan with grease and flour
02 - Whip cream cheese till creamy, then blend in sugar until light. Add eggs, then stir in buttermilk, oil, and vanilla
03 - Mix the flour, baking powder, salt, cinnamon, and jello powder through a sifter
04 - Slowly blend the dry mix into wet mix. Add most of the prepped strawberries, keeping some for the top. Pour in the strawberry juice
05 - Turn oven down to 325°F and cook for 50-55 minutes until a toothpick shows no wetness. Let it cool fully in the pan
06 - Whip cream cheese until fluffy, then mix in sugar, vanilla, and cream until smooth. Pour over the cooled bread

01 - You can turn this into muffins by changing the baking temp and timing
