Glass Window Cookies (Print Version)

# Ingredients:

→ Cookie Base

01 - 2 teaspoons vanilla (pure); 1 egg, not cold
02 - Just over 2 cups (281g) regular flour, and a little more for dusting
03 - 3/4 cup (150g) white sugar
04 - 3/4 cup (170g) butter, softened at room temperature
05 - Half a teaspoon baking powder
06 - Quarter teaspoon of table salt

07 - Unwrap 15 to 20 hard candies (like Life Savers or Jolly Ranchers)

→ Optional Topping

08 - 2 spoons of water or 1 egg white, for coating
09 - One-third cup (65g) colored sugar or fun sprinkles

# Instructions:

01 - In a mixing bowl, stir together salt, flour, and baking powder. Leave it nearby.
02 - Cream the softened butter with sugar until fluffy, then mix in the egg and vanilla. Gradually combine the dry stuff. Too sticky? Toss in another spoon of flour.
03 - Split dough in two halves, flatten each to 1/4 inch on parchment paper. Chill these stacks in the fridge for an hour or so.
04 - Sort the candy by colors, then crush into small shards with a rolling pin. Keep them handy.
05 - Use big cutters for the main cookies, then smaller ones to carve out the centers. Drop crushed candy into the holes, about three-quarters full.
06 - Bake at 350°F for 12-13 min until candy melts; cookies get a light golden touch. Let them cool before moving.
