Herbed Goat Cheese Tarts (Print Version)

# Ingredients:

→ Tart Shells

01 - All-purpose flour for rolling
02 - 1 egg for brushing, whisked
03 - 1 puff pastry sheet, defrosted

→ Filling

04 - 4 oz goat cheese with herbs
05 - 2 cloves of garlic, chopped
06 - 1 tablespoon of butter
07 - 2 chopped shallots
08 - Salt and black pepper as needed
09 - A handful of fresh thyme for topping
10 - 1 tablespoon olive oil
11 - 2 cups mushrooms, diced small

# Instructions:

01 - Set your oven to 375°F (190°C) and prep a baking tray with parchment paper.
02 - Heat up a pan with some butter and olive oil. Sauté the shallots until softened (around 2-3 minutes). Stir in garlic and cook for a minute until it smells amazing. Toss in mushrooms and cook everything together until tender and dry (5-7 minutes). Add seasoning, then let it cool off.
03 - Sprinkle a little flour on your work surface, then roll out the puff pastry to make it thinner. Chop it up into small shapes—rectangles are a good pick.
04 - Spoon the cooled mushroom mix onto each pastry piece, then crumble goat cheese generously across the tops.
05 - Flip up the edges of your pastry pieces to create a rustic look. Brush the exposed edges with the egg wash to give them that golden color.
06 - Slide the tray in the oven and bake for 20-25 minutes until puffed and perfectly golden.
07 - Scatter fresh thyme over the tarts and give them a few minutes to cool before digging in.
