Heat the oven to 400°F. Lay a sheet of parchment over your baking tray.

Mix together sausage, shredded cheese, breadcrumbs, one egg, and thyme in a bowl. Stir until smooth.

Beat the second egg with a splash of water until smooth for brushing.

Unroll puff pastry and slice each sheet lengthwise to get four long pieces overall.

Form sausage into four cylinder shapes. Lay them on the pastry strips. Spread mustard on one edge and brush egg wash on the other. Roll it up and seal the edges tight.

Score the tops lightly. Slice into 1½-inch sections. Coat with egg wash, sprinkle on seasoning, and bake them for 18-20 minutes until they're a lovely golden brown.
