Japchae Korean Noodles (Print Version)

# Ingredients:

01 - 2 pounds of thinly sliced beef (or swap for chicken, tofu, or shrimp)
02 - 1 pound of Korean glass noodles (sweet potato noodles)
03 - 3 medium-sized carrots, sliced into thin strips
04 - 1 big white onion, sliced thin
05 - 1/2 a bunch of green onions, cut into pieces
06 - 6 cloves of garlic, finely chopped
07 - 1/2 pound of fresh spinach leaves
08 - 4 tablespoons of sesame oil, split into portions
09 - 1 tablespoon extra virgin olive oil
10 - 6 tablespoons of soy sauce (use tamari for a gluten-free option)
11 - 3 tablespoons of brown sugar

# Instructions:

01 - Heat a big pot of water until it boils. Add a splash of olive oil, toss in the sweet potato noodles, and cook for 5–6 minutes. Drain the water, then put the noodles aside.
02 - Heat a pan over high heat and cook the beef until it turns brown. Pour in half the sesame oil, soy sauce, and brown sugar as it cooks. Once done, set it aside.
03 - In a new pan, add olive oil, followed by sliced carrots and onions. Cook until they soften, then mix in the rest of the sesame oil, sugar, and soy sauce. Stir in garlic and green onions, cooking for one more minute.
04 - Toss the spinach in, stirring until it wilts. Combine the beef, spinach, and veggies with the noodles.
05 - In a big bowl, toss all the ingredients together until well mixed. Serve warm, adding extra green onion on top if you like.
