Latte Gingerbread Treats (Print Version)

# Ingredients:

01 - 1½ sticks salted butter, softened.
02 - ¾ cup light or dark brown sugar.
03 - 2 teaspoons vanilla extract.
04 - 3 tablespoons instant coffee or espresso powder.
05 - ⅓ cup molasses, preferably blackstrap.
06 - 1 large egg.
07 - 2¼ cups all-purpose flour, adding more if necessary.
08 - 1¼ teaspoons baking soda.
09 - 1 teaspoon ground cinnamon.
10 - 2 teaspoons powdered ginger.
11 - ½ teaspoon salt.
12 - Granulated sugar for rolling dough.
13 - 1 stick salted butter for frosting.
14 - 1¾ cups powdered sugar for frosting.
15 - 3 tablespoons milk for frosting.
16 - ½ teaspoon powdered vanilla for frosting.
17 - A pinch of cinnamon for frosting.

# Instructions:

01 - Whip the softened butter with brown sugar until light and creamy. Stir in the coffee powder, vanilla, molasses, and egg. Keep going till smooth.
02 - In a different bowl, whisk together the flour, baking soda, ginger, cinnamon, and salt.
03 - Combine wet and dry mixes gradually till you’ve got a proper dough. Toss in a bit more flour if it feels too sticky.
04 - Shape the dough into small balls, roll them in sugar, then put them on your baking trays.
05 - Melt the butter until it turns a golden brown and smells nutty. Blend with powdered sugar, vanilla, milk, and cinnamon until smoothed out.
06 - Cook the cookies until they set at the edges but remain soft in the middle. After cooling, spread the frosting on top.
