Little Baileys Cheesecake Bites (Print Version)

# Ingredients:

→ Crust

01 - 12 smashed chocolate sandwich cookies
02 - 2 tablespoons melted butter
03 - Small amount of coarse salt

→ Cheesecake Filling

04 - 12 ounces softened cream cheese
05 - 2 big eggs
06 - 1/3 cup granulated sugar
07 - 1/4 cup Baileys or similar liqueur
08 - 1/4 cup tangy sour cream
09 - 1 1/2 tablespoons plain flour
10 - 1/2 teaspoon vanilla extract
11 - Tiny bit of coarse salt
12 - 1/2 cup tiny chocolate chips

→ Toppings

13 - Fresh whipped cream
14 - Drizzle of chocolate sauce
15 - Sprinkle of mini chocolate chips

# Instructions:

01 - Heat your oven to 325ºF. Put paper liners in a 12-cup muffin tin and give them a quick spray with cooking oil.
02 - Stir the cookie crumbs with melted butter and salt till everything sticks together. Push the mixture down firmly into each paper liner.
03 - Whip the cream cheese until it's light and fluffy. Mix in eggs and sugar, then add your liqueur, sour cream, 1 tablespoon flour, vanilla, and salt until it's nice and smooth.
04 - Mix chocolate chips with the leftover flour, then gently stir into your batter. Share the mixture evenly on top of each crust.
05 - Pop in the oven for 20 minutes or until middles are nearly set. Let them cool for half an hour, then stick them in the fridge for 2 hours.
06 - Before you serve them, add a dollop of whipped cream, some chocolate sauce, and a few mini chocolate chips on top.

# Notes:

01 - Need to chill for at least 2 hours in the fridge
02 - Has booze in it from the Irish cream
03 - Great for bringing to gatherings or holiday treats
