Loaded Barbacoa Wraps (Print Version)

# Ingredients:

→ Rice

01 - 1/4 cup fresh cilantro, chopped
02 - 1 lime, juiced
03 - 1 cup long-grain jasmine rice

→ Burrito Base

04 - 4 large tortillas (for burritos)
05 - 16 oz of shredded beef barbacoa
06 - 1 cup black beans (washed and drained)

→ Toppings

07 - 1 cup romaine lettuce, thinly sliced
08 - 1/4 cup creamy guacamole
09 - 1/2 cup chunky pico de gallo
10 - 1/4 cup tangy sour cream
11 - 1 cup shredded cheddar or Monterey Jack cheese

# Instructions:

01 - Follow the instructions on the rice package, then mix it with lime juice and cilantro when it's ready.
02 - Warm up the barbacoa in a pan over medium heat. Leave it untouched for about 3 minutes, give it a mix, and cook for another couple of minutes, so it's hot all the way through.
03 - Wrap tortillas in a damp cloth and microwave them for 30-60 seconds, or toast them in a skillet for half a minute on each side.
04 - Spread the rice, black beans, barbacoa, sour cream, guacamole, pico de gallo, shredded lettuce, and cheese onto each tortilla.
05 - Fold the sides of the tortilla over the filling, roll it up tightly, and put the seam side down. Slice it in half or wrap it in foil before serving.
