Turn the oven on and set it to 375°F (190°C).

Over medium heat, brown the beef in a big frying pan. Toss in the onions and garlic, then mix until they're soft.

Add the potatoes and keep cooking for about 5 minutes.

Mix in the thyme, salt, and pepper. Sprinkle over the flour and stir it all together.

Slowly stir in the beef stock until the mixture thickens up, which should take about 5 minutes.

Add the peas, give it a stir, and let the mixture cool off for a bit.

Roll out one puff pastry sheet and press it into the bottom of your pie dish.

Spoon the beef and potato mix into the lined pie dish.

Put the second puff pastry sheet on top. Trim any extra dough off the edges.

Brush the top with the egg wash and cut small slits so steam can escape.

Put it in the oven for 30-35 minutes, or until you see the crust turn crisply golden and the filling bubbling slightly.
