Mochi Filled Chocolate (Print Version)

# Ingredients:

→ Mochi Dough

01 - 1 tbsp cooking oil
02 - 240ml (1 cup) whole milk
03 - 15g (2 tbsp) cornstarch
04 - 48g (1/4 cup) white sugar
05 - 150g (1 cup) sticky rice flour
06 - 15g (2 tbsp) cocoa powder

→ Chocolate Ganache

07 - 120ml (1/2 cup) cream, heavy
08 - 30g (2 tbsp) butter (unsalted)
09 - 225g (7.9oz) semi-sweet chocolate chunks

→ Assembly

10 - 60g (1/2 cup) unsweetened cocoa powder for rolling

# Instructions:

01 - Combine chocolate, butter, and cream in a bowl. Mix till smooth, cover, refrigerate for 1-2 hours. Make 8 balls, and chill once again.
02 - In a microwavable bowl, stir together sugar, rice flour, cornstarch, and cocoa powder. Add milk, whisking till there are no lumps.
03 - Microwave the mix for 2 mins covered, stir, then microwave another 2 mins until glossy. Work in oil, knead until soft.
04 - Slice dough into 8 equal parts. Flatten one piece, plop a ganache ball in the middle, and fold dough around it. Pinch to close.
05 - Toss each ball generously in cocoa powder till fully covered and smooth.

02 - Store in the fridge to keep fresh
03 - Leave out for a bit before eating so it softens up
