Sweet Nutella Strawberry Valentine Cakes (Print Version)

# Ingredients:

→ Cupcakes

01 - 1 3/4 cups sifted cake flour (207g), lightly measured
02 - 3/4 teaspoon baking powder
03 - 1/4 teaspoon baking soda
04 - 1/4 teaspoon salt
05 - 1/2 cup room temp unsalted butter (113g)
06 - 1 cup white sugar (200g)
07 - 3 large egg whites, warmed to room temp
08 - 1 1/2 teaspoons real vanilla extract
09 - 1/2 cup room temp sour cream or plain yogurt (120g)
10 - 1/2 cup room temp whole milk (120ml)

→ Filling

11 - 1/3 cup hazelnut chocolate spread (100g)

→ Swirled Buttercream

12 - 1 cup freeze-dried strawberries (25g)
13 - 1 1/2 cups softened unsalted butter (340g)
14 - 6 cups powdered sugar (720g)
15 - 1/3 cup milk or heavy cream (80ml)
16 - 1 teaspoon real vanilla extract
17 - 1/8 teaspoon salt
18 - 1/3 cup hazelnut chocolate spread (100g)

# Instructions:

01 - Heat your oven to 350°F (177°C). Put liners in a 12-cup muffin tin and stick 2-3 more in another pan for leftover batter.
02 - Combine cake flour, baking powder, baking soda, and salt in a bowl and stir together. Put it aside for now.
03 - Whip the butter and sugar till fluffy. Throw in egg whites, then mix in sour cream and vanilla. Gently fold in dry stuff and milk just until everything's combined.
04 - Drop batter into each liner, filling about 2/3 full. Pop in oven for 20-22 minutes or until you can stick a toothpick in and it comes out clean. Let them cool completely.
05 - Scoop out the middle of each cupcake. Spoon hazelnut spread inside and pop the cake piece back on top.
06 - Grind your freeze-dried strawberries into fine powder. Whip the butter until fluffy, then add sugar, milk, vanilla and salt. Split your frosting in two batches. Mix hazelnut spread into one half and strawberry powder into the other.
07 - Stack both frosting types in one piping bag with a 1M tip. Swirl pretty frosting patterns on each cupcake. If you want, add chocolate hearts or fresh strawberries on top.

01 - Room temp ingredients mix better and make fluffier cupcakes
02 - For folks with nut allergies, swap the hazelnut spread with regular chocolate ganache
03 - Don't try using regular dried strawberries in the frosting, they won't work like freeze-dried ones
