Pink Tea from Kashmir (Print Version)

# Ingredients:

→ Tea Foundation

01 - 4 cups water
02 - 2 tablespoons mountain green tea from Kashmir/Himalayas (regular green tea works too)
03 - 2 cups full-fat milk

→ Flavors & Extras

04 - 1/2 teaspoon baking soda
05 - 1-2 star anise
06 - 2 cardamom pods, smashed
07 - 1 cinnamon stick
08 - 1/4 teaspoon salt

→ Finishing Touches

09 - Sugar or honey according to preference
10 - Chopped almonds to top it off (if you want)

# Instructions:

01 - Get the water bubbling in a pot, toss in the green tea, and let it cook for roughly 5 minutes.
02 - Mix in baking soda and watch the water turn deep red. Let it bubble for another 2 minutes.
03 - Toss in your star anise, smashed cardamom, and cinnamon. Let everything bubble together for a minute.
04 - Lower the heat and let it gently bubble for 20-30 minutes until it's half the amount, making the flavor and color stronger.
05 - Add salt, pour in milk, and bring the mix to a bubble while keeping it moving. You'll see it turn a lovely pink shade.
06 - Pour through a strainer into mugs, add sweetener as you like, and sprinkle with nuts if you fancy. Drink it while it's hot.
