Shrimp Asparagus Mushroom Stir-Fry (Print Version)

# Ingredients:

→ Seafood

01 - 450 g shrimp, peeled and deveined

→ Vegetables

02 - 1 bunch asparagus, trimmed and cut into 2.5 cm pieces
03 - 240 ml mushrooms, sliced
04 - 2 garlic cloves, minced

→ Condiments and Seasonings

05 - 2 tablespoons olive oil
06 - 0.5 teaspoon salt
07 - 0.25 teaspoon black pepper
08 - 1 tablespoon soy sauce
09 - 1 tablespoon lemon juice

# Instructions:

01 - Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add shrimp and cook for 2 to 3 minutes until pink and opaque. Remove shrimp from the pan and set aside.
02 - Add the remaining tablespoon of olive oil to the skillet. Sauté asparagus and mushrooms for 3 to 4 minutes until asparagus is vibrant green and tender-crisp.
03 - Stir in minced garlic, salt, and black pepper. Cook for 1 minute, stirring constantly to prevent burning.
04 - Return cooked shrimp to the skillet. Stir in soy sauce and lemon juice, tossing all ingredients until evenly coated and heated through.
05 - Serve the stir-fry hot over steamed rice, noodles, or quinoa if desired.
