Put your quartered onion and parsley in the food processor. Pulse a few times until everything's chopped up fine.

Dump your ground beef into a big bowl. Add the chopped onion-parsley mix and all spices. Get your hands dirty and mix it all up well.

Grab some meat mixture and wrap it around each skewer. Make sure it's about an inch or inch and a half thick all around.

Fire up your grill, charcoal or gas works fine. For gas grills, heat to medium-high and oil the grates. Lay your kebabs on the grill. Cook about 4 minutes on one side, flip them over, and cook another 4 minutes until they're done inside.

Pop them on plates right away and enjoy.
