Spiced Lebanese Meat Skewers (Print Version)

# Ingredients:

01 - 1 medium yellow onion cut into quarters
02 - 1 cup fresh parsley rinsed and dried
03 - 600 grams lean ground beef
04 - 1 teaspoon salt
05 - ¼ teaspoon black pepper
06 - ¼ teaspoon seven spice blend
07 - ⅛ teaspoon cayenne add more if you like it spicy

# Instructions:

01 - Put your quartered onion and parsley in the food processor. Pulse a few times until everything's chopped up fine.
02 - Dump your ground beef into a big bowl. Add the chopped onion-parsley mix and all spices. Get your hands dirty and mix it all up well.
03 - Grab some meat mixture and wrap it around each skewer. Make sure it's about an inch or inch and a half thick all around.
04 - Fire up your grill, charcoal or gas works fine. For gas grills, heat to medium-high and oil the grates. Lay your kebabs on the grill. Cook about 4 minutes on one side, flip them over, and cook another 4 minutes until they're done inside.
05 - Pop them on plates right away and enjoy.

# Notes:

01 - Wooden skewers need a 30-minute water bath first
02 - Allspice works fine if you don't have seven spice blend
03 - You can shape these into burger-like patties if you don't have skewers
04 - Oven option: bake at 375°F for 15-20 minutes
05 - Store extras in fridge for 3-4 days or freezer for 3 months
