Nashville Spicy Baked Sandwich (Print Version)

# Ingredients:

→ Chicken

01 - 2 (8 ounce) chicken breasts, boneless skinless, cut in half lengthwise
02 - 3/4 cups plain flour
03 - 1 tablespoon garlic powder, split in half
04 - 1 teaspoon yellow turmeric
05 - 1 teaspoon smoky paprika
06 - 1 teaspoon table salt
07 - 1/2 teaspoon ground black pepper
08 - 2 large eggs, beaten
09 - 1 cup crunchy panko crumbs

→ Hot Honey Butter

10 - 1/2 cup melted unsalted butter
11 - 1/4 cup sweet honey
12 - 1 tablespoon smoky paprika
13 - 1 teaspoon hot cayenne
14 - 1/4 teaspoon fine salt

→ Assembly

15 - 4 lightly grilled burger buns
16 - 2 cups finely cut iceberg lettuce
17 - 1/2 cup creamy ranch dressing

# Instructions:

01 - Dry chicken pieces and add a bit of salt and pepper. In one bowl, stir flour with half your spices. In another, beat the eggs. In the third, mix panko with the rest of your spices.
02 - Roll chicken in the flour mix, then dip in beaten eggs, and finally roll in the spicy panko. Push down firmly so coating sticks. Put on a greased rack over a tray and chill for 30 minutes.
03 - Heat your oven to 400°F. Give chicken a light spray with cooking oil and bake for about 15-20 minutes till it's golden brown and fully cooked.
04 - Stir together the warm butter, honey, smoky paprika, hot cayenne, and salt. Brush this tasty mix all over your baked chicken.
05 - Smear ranch on your warm buns, stack with the chicken and add lettuce on top. Best eaten right away.
