Spicy Cowboy Cheese Mix (Print Version)

# Ingredients:

01 - ½ pound spicy or mild ground pork sausage, wrapper taken off
02 - ¾ cup light beer (or whatever brew you like)
03 - 16 ounces Velveeta cheese, chopped into 1-inch squares
04 - ½ cup freshly grated pepper jack cheese
05 - 1 can (14.5-ounce) diced tomatoes with green chilies, keep the juice
06 - 1 cup black beans, washed and drained
07 - ¼ cup fresh chopped cilantro leaves
08 - Sea salt and coarse black pepper, as needed

# Instructions:

01 - Cook sausage in a medium pan over medium flame until crumbly and brown. Sprinkle with salt and pepper.
02 - Add your beer and let it bubble for 3-4 minutes until it cooks down a bit.
03 - Drop in Velveeta and pepper jack, mixing until they're totally smooth, roughly 3-5 minutes.
04 - Fold in your tomatoes with chilies, black beans, and cilantro until everything's mixed well.
05 - Grab some chips and enjoy it hot.
