Spicy Chicken Rice Dish (Print Version)

# Ingredients:

→ Meats

01 - 1 pound chicken thighs without skin or bones, chopped into 1-inch pieces
02 - 1 pound hot smoked sausage (conecuh or andouille), sliced into 1-inch rounds

→ Base

03 - ¼ cup olive oil
04 - 10 oz frozen veggie mix (celery, onion, bell pepper)
05 - 1 can (14.5 oz) tomatoes, diced with oregano, garlic & basil
06 - 1 can (14.5 oz) chicken broth
07 - 2 cups extra long grain rice, uncooked

→ Seasonings

08 - 1 tablespoon parsley, dried
09 - 1 teaspoon basil, dried
10 - 1 teaspoon powder made from garlic
11 - ½ teaspoon cajun spice blend
12 - ½ teaspoon pepper
13 - ½ teaspoon salt

# Instructions:

01 - Warm oil in a heavy 5-qt pot. Sprinkle chicken with cajun spice and cook until brown for 3-5 minutes. Take out from pot.
02 - Get sausage nice and brown for 5 minutes. Throw in veggies, put the lid on and cook for 5 minutes, only stir once.
03 - Put chicken back in pot. Add your rice, broth, tomatoes and all seasonings. Let it come to a boil, then cover and simmer for 10 minutes. Just stir one time.
04 - Turn the heat way down, keep covered and let it cook another 30 minutes until rice gets soft. Don't peek under the lid or let it boil.

# Notes:

01 - Fresh veggies work fine instead of the frozen stuff
02 - You can cook this in your oven at 350°F for an hour
03 - Regular rice only, instant won't work
