Spicy Sausage Rice Pan (Print Version)

# Ingredients:

01 - 12 ounces sliced andouille or kielbasa sausage, cut into ½-inch circles
02 - 1 cup thoroughly washed long-grain white rice
03 - 1 chopped red bell pepper
04 - 1 chopped green bell pepper
05 - 1 medium diced yellow onion
06 - 3 finely chopped garlic cloves
07 - 1½ cups chicken stock
08 - 2 tablespoons Cajun spice mix
09 - 1 tablespoon olive oil
10 - Salt and pepper, as needed

11 - Chopped parsley
12 - Sliced green onions
13 - Spicy sauce

# Instructions:

01 - Cut sausage into ½-inch circles. Chop peppers and onion, finely chop garlic. Wash rice until it's clean.
02 - Warm olive oil in big skillet on medium flame. Brown sausage for 5-7 minutes till edges get crispy. Take out and put aside.
03 - Using the same pan, cook onion with peppers for about 3 minutes till they soften. Throw in garlic and stir for another minute till it smells good.
04 - Mix cleaned rice with the veggies and oil in your skillet. Stir now and then for about 2 minutes till it smells nutty.
05 - Pour in chicken stock and add Cajun spices. Mix well, let it bubble up, then turn heat down low. Cover and cook 15-20 minutes till rice gets soft and soaks up all the liquid.
06 - Put browned sausage back in the pan and stir it all up. Cook another 3-5 minutes so flavors can mix together.
07 - Top with parsley, green onions, or hot sauce if you want. Enjoy while it's hot.

01 - Make it spicier or milder by changing the amount of Cajun spice
