Cut sausage into ½-inch circles. Chop peppers and onion, finely chop garlic. Wash rice until it's clean.

Warm olive oil in big skillet on medium flame. Brown sausage for 5-7 minutes till edges get crispy. Take out and put aside.

Using the same pan, cook onion with peppers for about 3 minutes till they soften. Throw in garlic and stir for another minute till it smells good.

Mix cleaned rice with the veggies and oil in your skillet. Stir now and then for about 2 minutes till it smells nutty.

Pour in chicken stock and add Cajun spices. Mix well, let it bubble up, then turn heat down low. Cover and cook 15-20 minutes till rice gets soft and soaks up all the liquid.

Put browned sausage back in the pan and stir it all up. Cook another 3-5 minutes so flavors can mix together.

Top with parsley, green onions, or hot sauce if you want. Enjoy while it's hot.
