Spicy Sweet Shrimp (Print Version)

# Ingredients:

→ Shrimp

01 - 1 pound medium shrimp, shells removed and cleaned (roughly 25 pieces)
02 - salt and fresh black pepper as needed
03 - ½ cup cornstarch
04 - 2 large eggs, whisked
05 - ¼ cup canola oil for cooking

→ Sauce

06 - ½ cup spicy sweet chili sauce
07 - 3 tablespoons fresh lemon juice
08 - 2 tablespoons honey
09 - 1-2 tablespoons lemon peel shavings
10 - ½ teaspoon hot sauce
11 - ½ teaspoon fresh ginger, grated
12 - ½ teaspoon garlic salt

# Instructions:

01 - Pour canola oil into a big saucepan and warm it up over medium-high heat.
02 - Sprinkle salt and pepper on your shrimp. Roll them in cornstarch, then quickly dip in whisked eggs right before they go in the pan.
03 - Fry shrimp in small groups of 4-6 until they turn golden, taking about 2-3 minutes. Put them on paper towels to soak up extra oil.
04 - Mix all sauce stuff in the cleaned-out pan. Let it bubble on medium-high heat for 2-3 minutes.
05 - Throw your cooked shrimp into the sauce and stir them around. Eat right away with some rice or veggies.
