Strawberry Cheesecake Valentine Treats (Print Version)

# Ingredients:

→ Base

01 - 1 1/2 cups crushed graham crackers (150g), roughly 10 whole sheets
02 - 4 ounces solid cream cheese block (113g), full-fat only
03 - 1/3 cup powdered sugar (40g)
04 - 1/3 cup small-chopped strawberries (55g), moisture removed

→ Coating

05 - 10 ounces chopped white chocolate (280g)
06 - 1 drop pink or red food dye (if you want)

# Instructions:

01 - Put parchment paper or a silicone mat on a big baking sheet and leave it aside.
02 - Combine your graham crumbs, cream cheese, and powdered sugar with a hand mixer or in a food processor until everything clumps together. Fold in your chopped strawberries gently.
03 - Scoop 1.5-2 teaspoons of mixture onto your lined sheet. Cool for 30 minutes, then roll into balls and chill again.
04 - Heat white chocolate using a double boiler or microwave (15 seconds at a time), stirring until it's completely smooth.
05 - Dunk each chilled ball into the melted chocolate, shake off extra, and put back on the sheet. You can mix food dye into leftover chocolate and drizzle it on top if you'd like.
06 - Chill for 30 minutes or until the chocolate hardens completely before you serve them.

# Notes:

01 - Pat your diced strawberries with paper towels to get rid of juice for easier rolling
02 - Go for real white chocolate bars instead of chips for better melting
03 - You can make the balls up to 3 days early and coat them later
