Put parchment paper or a silicone mat on a big baking sheet and leave it aside.

Combine your graham crumbs, cream cheese, and powdered sugar with a hand mixer or in a food processor until everything clumps together. Fold in your chopped strawberries gently.

Scoop 1.5-2 teaspoons of mixture onto your lined sheet. Cool for 30 minutes, then roll into balls and chill again.

Heat white chocolate using a double boiler or microwave (15 seconds at a time), stirring until it's completely smooth.

Dunk each chilled ball into the melted chocolate, shake off extra, and put back on the sheet. You can mix food dye into leftover chocolate and drizzle it on top if you'd like.

Chill for 30 minutes or until the chocolate hardens completely before you serve them.
