Heat your oven to 325°F (160°C). Spray nonstick or grease a 9-inch springform pan. Combine cookie crumbs and melted butter, press evenly on the pan bottom. Bake for 8-10 minutes until lightly browned. Let it cool down fully.

Blend the cream cheese and sugar until creamy and smooth. Mix eggs in one by one, then add vanilla and sour cream. Stir in sprinkles carefully—don’t stir too much.

Spread the filling on top of the cooled crust. Bake for 50-60 minutes until the center is a bit wobbly but mostly solid. Turn the oven off, crack the door open, and let it sit an hour.

Take it out of the oven, allow it to cool fully, then cover and chill in the fridge for at least 4 hours, or leave it in overnight.

Before serving, add whipped cream and toss on some extra sprinkles if you'd like.
